There’s a scene in the Netflix documentary 7 Days Out that’s stuck with me.

It’s about Eleven Madison Park, one of the most celebrated restaurants in the world. Just months after being named #1 restaurant on the planet, they shut it all down. Not for a renovation someone demanded. Not because they had to.

They did it because they weren’t satisfied.
